Breakfast Tacos!
I often hesitate before I call myself a cook, because a lot of what I do is looking in my refrigerator and throwing what I see together. Something about searching for a suitable flavor profile makes me feel like I am on my favorite TV show, Master Chef, and I love having my family try my new creations, cosplaying Gordon Ramsey. That is exactly what I did this Saturday morning as I marveled at the gourmet ingredients that college deprived me of. I have been wanting to try the viral feta eggs that are trending on Tik Tok, but with an elevated twist.
I began by making the feta eggs, where I laid out a crust of feta crumbles on a hot pan. I cracked an egg over the melty cheese and covered the pan, ensuring the egg would cook without burning the cheese. As this was forming, I sliced up an avocado and warmed up a tortilla and prosciutto on a separate pan, preparing to layer the ingredients. On top of the tortilla, I laid the salty egg, salty meat, and avocado, which I decided to top with some truffle salt for an extra layer of flavor.
This breakfast was delicious, and I would defiantly make it again, but it should be noted that I have been known to over-salt my foods, so if you’re trying to cut back on sodium, I would recommend using a different form of truffle rather than the salt. I think this taco would be perfect with a creamy truffle aioli or some Truff hot sauce, really whatever floats your boat!
