Chicken Caesar Pizza
Whenever I see a Tik Tok recipe that I want to try, I am always skeptical that the taste will not match the aesthetic. When this chicken caesar salad pizza started to surface on my for you page, I giddily elected to try it, seeing as it combined two of my absolute favorite foods. I was nervous to make it for my family, who usually laughs at my social media based ideas, but they ended up really liking it, and even asked me to add the crust (which can also be used as a cracker or sandwich thin) to the rotation of “usuals”.
Because I got this idea from a fifteen second video, I had to come up with my own measurements, which, in my opinion, I perfected. I bought three cans of chicken, amounting to 37.5 total ounces. I strained the chicken, then added it to a bowl with three eggs, three and a half cups of shredded parmesan, salt, pepper, some garlic powder and some red pepper flakes (measure with your heart, minding your spice tolerance!). I mixed this together and then divided it into three different crusts. Really, you can make these as thick as you’d like, but I decided to push them out almost as flat as I could because I wanted a very crispy crust. Because my crusts were not uniform, they all had varied cooking times, so I set the over for 375 degrees Fahrenheit, and checked them after 35 minutes, 40 minutes, 45 minutes, and 50 minutes, which is when the last one was finished. As a trial, I made two circular and one rectangular, expecting to like the more traditional shape better, but actually preferring the rectangle, which I ended up folding over the lettuce to make a sandwich of sorts.
I then mixed chopped romaine hearts with Trader Joe’s vegan caesar dressing (usually I would make this from scratch, but I was on a time crunch, and this is my favorite store bought option) and some more parmesan. Once the crusts were cooled and my family was ready to eat, I topped them with a hefty amount of the salad and served it up. My family was impressed with the crispy, cheesy, protein packed crust and the zest of the salad. I would consider this a win for Tik Tok!!
